
Happy Labor Day, sweet friends! It’s the unofficial end of summer in my opinion and no more white pants in the South! Hahaha! Just kidding. I don’t think that “rule” really exists much anymore. What do you think? Should we still wear white pants after Labor Day? I will admit to changing from a white to brown purse today.
So, if you’re reading this (well maybe after you read this) and you are an apple dessert fan like me, drop what you are doing and go make these brownies! Like fo real!! Your family will thank you! And if you don’t have all the ingredients, go get them pronto! It reminds me of the warm, ooey-gooey cinnamon goodness of banana bread, but with apples. And I just think of apple everything in September! It’s really easy to make! I think the most time consuming part of it is just peeling and dicing the apples. Nothing to that though! And you probably have most all the ingredients on hand which makes it even better.
Apple Blonde Brownies
1 stick of unsalted butter (melted)
2 peeled and chopped apples
1 TBS lemon juice
1/2c sugar
1/2c brown sugar
1 beaten egg
1/2 tsp vanilla extract
1/2 tsp baking powder
pinch of salt
1/2 tsp cinnamon
1/4 tsp nutmeg
1 1/4c flour
Preheat oven to 350 and grease an 8×8 pan. (*NOTE: I double the recipe for a 9×13 pan.)
Toss apples in lemon juice. In separate bowl, mix sugars, egg and vanilla well. Add melted butter. Add baking powder, salt, spices and flour and mix well. Gently fold in apples. Bake 27-30 minutes. Allow to cool completely if you want to slice. Or you can just get a fork and dig in while they are hot and gooey like I prefer. And they may or may not be unbelievably delicious with your coffee the next morning. Ask me how I know!

I made these this weekend and they were so easy yet so delicious ~ a new Fall favorite for my family! Also, thank you for inspiring me to put down my to~do list and make the most of an opportunity to spend a fun afternoon with my daughter! I got the unexpected opportunity to pick her up from school yesterday (I work outside the home) and instead of going straight home so she could take a nap I decided to make the most of my afternoon off and take her for a surprise trip to an indoor bounce house after school. She had a blast and I had fun watching her enjoy a new experience.
