Crockpot Gumbo

This is such an easy version of a gumbo and perfect for a week night dinner that you can have waiting on you after a long day.  My family loves it!  And my house was smelling mighty fine.  The smell had me craving it long before dinner time.

There is a little prep time involved in chopping the onions, celery, bell pepper, and sausage, but once you do that, there’s nothing to it!  It’s just about throwing everything else in the pot and allowing the crock pot to work it’s magic.  I don’t know about you, but when I have something in the crock pot and the majority of dinner ready first thing in the morning, it just makes my day!  One thing I do sometimes if I’m in a hurry and have a lot of veggies to chop is get my food processor out and take full advantage of letting it do all the work for me.  Then you can just throw your attachments in the dishwasher.  That makes it super fast and easy.

Let me know if you try it and what you think.  If you don’t like spicy things and are sensitive to that, this may not be the recipe for you.  My kids ate it so I don’t think it’s too spicy, but they tend to not mind a little bit of spice.  I hope you try it and enjoy!  Have the best day!
