Asian Slaw

Hi friends!  I hope this finds you well and healthy during this uncertain time.  I haven’t been sharing very much lately because honestly, I’m doing what all of you are probably doing… a whole bunch of nothing!  Lol.  I mean, there’s allll the normal mommy and wife things, but nothing super creative and special to share with you friends lately.  We have just been hunkered down, trying our best to stay sane and not complain.  We are healthy and blessed, but I’d be lying if I said there hasn’t been tough days.  I do love the abundance of family time and snuggles, but we are just really missing the rest of our family and friends!  It seems the days we aren’t able to get outside are the hardest.  Does that seem to be the case for y’all too?

I made this Asian slaw recently and thought I had to share with you all because we enjoyed it so much! I thought it was perfect for summertime and all these backyard BBQs that I think people are going to be anxious to host.  I believe it would pair so well with most anything on the grill!  We enjoy it with BBQ, hamburger and hotdogs and even ham occasionally.  *And it is waaaay better the next day, after it’s had time to sit and marinate overnight.

Asian Slaw

Ingredients:

1 lb bag of coleslaw mix OR broccoli slaw

1/4 cup finely chopped onion

1/2 cup chopped bell pepper

1 cup chopped cherry tomatoes

1 cup mandarine oranges

crushed ramen noodles

salt and pepper

Optional Garnishings: slivered almonds and scallions

Marinade Dressing:

2 Tablespoons sugar

3 tablespoons red wine vinegar

1/2 cup oil

ramón noodle seasoning

Toss ingredients together and then pour marinade on and mix well.  The longer you can let it sit and marinade in the refrigerator, the better.  The noodles will get soft, so if you prefer the crunch, do this right before serving.
