
These charcuterie boards are all the rage right now. And I must say, it is fun and often convenient to just throw everything on one board rather that different plates and bowls. And if your kids are like mine, they come in like a bear needing food every afternoon after school. So often times, I enjoy having something already out and ready for them.
This particular day, I decided to raid the pantry and refrigerator and pull out every bit of green and rainbow foods I had for some St Patty’s Day fun! Below I listed all the goodies and of course mixed a little “bad” with a lot of “good”.
Celery
Cucumbers
Veggie Straws
Bell Pepper (I used a shamrock cookie cutter.)
Spinach and Cheese Tortellini
Kiwi
Rainbow: Apples, carrots, yellow bell pepper, green bell pepper, grapes, marshmallows
I would consider my kids pretty good eaters, but even more so when I make it fun! Never would they come in from school and choose to eat a ton of raw veggies, but arranged in a rainbow and they were all over it!
