
This was such a fun weekend as we celebrated my amazing husband’s birthday. He’s truly our rock and I’m so blessed to call him mine. He deserves every bit of celebrating. We always get cakes from the bakery or I even make birthday cakes from time to time, but I just wanted to do a little something different this time. We all love ice cream and during the summer we often enjoy ice cream sandwiches, so when I saw this idea on Pinterest a while back, I knew I wanted to try it for his birthday cake. And boy, was it a HIT!
It literally took me 5 minutes to throw together! You really could make this as big as you’d like. All you need are the ice cream sandwiches, cool whip, caramel, chocolate and any toppings you may like. You can customize this however you would like as well using crushed Oreos, butterfingers, M&Ms, chocolate, caramel, etc. I used 12 ice cream sandwiches, 4 rows of 3 as you see here. Then cover in cool whip just like if you were icing a cake and cover in all the happiness and toppings you would like.
And isn’t it just the cutest!!? The only tip I would give is you must work quickly, so have everything out and ready. Other than that, it is easy peasy! This would be adorable for any occasion! And sometimes we don’t need an occasion to celebrate. Sometimes a “just because” celebration is the best kind! Let me know if you give it a try.
