
Who else enjoys breakfast for dinner? Sometimes we call this “brinner”. We love it! And I’m not really sure why, but we tend to have it for dinner more often during the Fall and Winter. Today, I thought I would share my go-to breakfast casserole with you today. It is super simple and you can customize it different ways to suit your preference. You can pick your favorite cheeses and similar to a pizza… you can add the toppings you would like such as onion, bell pepper, mushrooms, tomatoes, etc.
A sweet friend from college shared this recipe with me a few years ago for Christmas morning and it was a huge hit. I don’t think I’ve made another one since. I love it for Christmas because I can make it the day before and stick in the refrigerator to just pull out and bake on Christmas morning. And it is super simple, which is always a win-win! On this particular night, I served it with my son’s beloved cheese grits. This is one of his favorites, a side of fruit and I love avocado with most all eggs. My husband makes the best omelets and having an avocado to eat with it just takes it to a whole new level. We also love to squeeze a little siracha sauce on top for some spice. A very simple menu to throw together and definitely one of those comfort foods that leaves you satisfied. Happy Monday! I pray you all have a wonderful week!
We love this!! In fact, I just made it this weekend for a gathering with some families. And my kids call breakfast at dinner “Brinner” too! So cute. 😋☺️
