Whip It Up Wednesday: Pumpkin Muffins

Happy Whip It Up Wednesday! Are you ready for the most simple pumpkin recipe, breakfast, dessert you’ve ever baked in your life time!? Yep!  Not even kidding!  There are only 3-4 ingredients.  This is the most perfect recipe for your itty bitty bakers!

My mom used to make these growing up and I always loved them! In fact, she would make multiple batches and put half in the freezer.  We would then pull out as many as we would like for breakfast or a quick dessert and just throw in the microwave for a short time and they are just like they came out of the oven.   I believe they are a Weight Watchers recipe (minus the chocolate chips) and they are considered 1-2 points depending on if you had a mini or regular size.

Mini Chocolate Chip Pumpkin Muffins

1 box of cake mix (any flavor, but spice cake is the best)

1 can pumpkin

1/2 – 3/4 cup water

*optional ingredients: mini chocolate chips or pecans

Mix all ingredients until smooth.  If desired, fold in mini chocolate chips.  Pour in greased muffin pan and bake at 350 for 13-15 minutes.  You can use mini or regular size muffin pan. I made both sizes and made half the batter with chocolate chips and half without.  The kids love the chocolate chips of course.  I actually prefer them without.
