
Happy Whip It Up Wednesday! I wanted to share a recipe that my husband made recently and we all fell in love with them. We enjoyed them so much that we have made them several times since and put a different spin on it each time.
My hubby has always been an awesome omelet maker. We eat them often and even love them for dinner. My son wasn’t able to say “omelet” as a toddler and started calling them “envelopes”. They have been “envelopes” in our house ever since. These egg bites remind us so much like an envelope and are so much easier to make in my opinion. They are a healthy option for breakfast, lunch or dinner and an easy way to get veggies in my kids as well. If you are on the popular paleo diet plan or no carbs, I think these would be perfect for you.
I have had someone tell me you can throw these in a freezer bag and place in the freezer. Each morning you would like one, just pull out and microwave for a bit. Ours get eaten so fast that I don’t know that it will ever be necessary to freeze ours, but if you are the only one eating them, it may be something you would like to try.
This recipe is so versatile that it’s hard to nail down a specific recipe but I will tell you the process and you put the goodies in yours that you prefer.
DIRECTIONS:
-Spray your muffin pan with a non-stick baking spray.
– If your muffin tin is for 6, use 6 eggs, 12 will be 12 eggs. Crack and mix your eggs and pour some in each tin.
-Add whatever toppings you would like, just like you would an omelet. Some options include: Cheese, spinach, tomatoes, onion, bell peppers, mushrooms, bacon, sausage, ham, etc.
This was a veggie one we made.
And this one had veggies and LOTS of cheese and bacon. Hahaha!
-Bake at 350 for 12-15 minutes.
-We love adding siracha sauce to ours too! Healthy, easy, convenient and YUMMY! ENJOY!!!
