
We love cake pops around here! They are so fun and festive and I love all the different ways you can customize them, from the cake flavor to color to sprinkles. They are the perfect addition to any party or celebration. For the past 2 years, we have made pink cake pops for recital day for my daughter to pass out to her dance friends.
I have made a couple different recipes. I have tried the recipes where you take a cake and crumble it and add cake icing or cream cheese and then you roll it up in balls. That’s a lot of trouble when you can just use a simple cake mix and be done. But, it is very rich and we just prefer the flavor of a simple cake mix. You can still choose what cake flavor you would like. I usually do vanilla because that’s just what my kids prefer, but you can do strawberry, chocolate, lemon, etc. I’ve also used a brownie mix before as well.
I use a cake pop pan to bake them in and found it years ago at Homegoods. You can find them on Amazon, as well. I have found that using a tablespoon measurement is the easiest and quickest way to add the batter to the pan. It’s the perfect measurement. The lollipop sticks and colored chocolate I purchased from Michaels. Hobby Lobby has these, as well.
Sometimes I will bake my pops ahead of time and freeze in a ziploc bag. One cake batter makes a ton of pops, so often times I have enough to save for my next party.
I have found that the key to inserting your stick and it staying in place is dipping your stick in chocolate first before inserting in the pop and then freezing for a bit to “set” . Otherwise, often times your stick will just come right out and not stay. Once this is done, the fun starts of dipping and adding your sprinkles. If you feel that the chocolate is too thick, you can always add a bit of oil. Just remember you can always add more, but it’s harder to take out, so go sparingly. A little bit of oil goes a long way. Once you have dipped a few, go ahead and add your sprinkles while still wet. This is the fun part!
