
Happy Whip It Up Wednesday! I pray you all are having a wonderful week. This week seems to be flying by for me. May just seems to be a busy month for us the past couple years. Lots of school events and end of the year activities to plan for and do, all while being at the ball field several nights a week it seems here lately. I am not complaining. My daughter and I enjoy going about as much as my hubby and son on most days. There’s just something about being at that ball field in the Spring that I just love!
Today, I am sharing one of our very favorite Spring/Summer-time side dishes. We eat a lot of salads and this is one we really love. A good friend of mine brought this to our church small group several years ago and it was a huge hit for all. I love that it is so versatile. You can choose what berries you prefer. For us, I usually grab strawberries and blueberries. To change things up this time, I decided on black berries instead of the blueberries. The sweet dressing really sweetened up the tart blackberries in my opinion and we loved it.
And I’ve never met a cheese I didn’t just love. For this salad, you can really choose between feta, goat or blue cheese and I do something different each time it seems. Same with the nuts. Sometimes I buy pecans. Other times I’ll buy almonds or cashews (honey roasted). Just pick your favs and enjoy!
Whatever you do, you can not use store-bought dressing with this. Hahaha! It’s a little more time consuming I know to make your own, but trust me on this… it is totally worth it! The dressing is what makes the salad in my opinion! The recipe is below in a PDF for you to print.
This salad is sooo wonderful with many things. It seems we are typically pairing it with something my hubby has just taken off the grill. It is a beautiful side dish to take if you are heading over to a friends home or having company, etc. And everyone loves it!
