Whip It Up Wednesday: Taco Salad

Happy Whip It Up Wednesday!  So here’s a very simple family favorite in my house.  In fact, it’s usually a weekly or at least bi-weekly rotation around here!  This is an easy way for me to get multiple veggies in my kids without a problem.  And I love to change it up a bit every week.  There’s always a different mixture it seems.

Taco salads are probably pretty popular in most homes and can make the prettiest presentation if you take the time to do it.  Wouldn’t this salad be gorgeous to take to a church function or if you sign up to take a neighbor a meal?  And there are so many different mixes you can make.  The options are endless.  This particular salad had the following:  chopped romaine and spring mix lettuce. tri-color bell peppers, tomatoes, Mexican blend cheese, taco meat, avocados, scallions, cilantro and blue tortilla chips.

Sometimes I make this same salad, but I may replace taco meat with fajita style chicken.  Sometimes I will add black beans, corn, raw spinach instead of lettuces, and even roasted veggies like bell peppers and onion.  I have even added green peas in it and my kids love it!  I typically like to make the Hidden Valley Ranch dressing to serve over it.  It never fails when my kids ask what’s for dinner and I mention taco salad, they are always excited.  There’s just something fun about throwing everything together and giving it a toss.  Don’t ya think?

If you want to make this presentation, my suggestion is to start with the lettuce to fill in the large bowl.  Than add everything on top.  Add your chips around the sides at the very end.  They are easy to add around the edges and just make it so pretty in my opinion.
