
Happy Monday everyone! I pray your weekend was good and you are looking forward to tackling another week. Our weekend didn’t go as planned, but it was still a nice one. We have had a TON of rain here in Birmingham and the anticipation of the opening weekend of baseball for my little guy was cancelled due to wet fields. We were very disappointed, as we all love it, but that just gave us more time to relax and hang out with my parents and cousins a bit more, which is always good.
If you have been with me since the beginning, you know my love for my momma’s strawberry cake. It was one of the first recipes I shared on the blog back in September. It is my all-time favorite and she made it and brought it up for the weekend. I feel like I’ve gained about 10lbs since Saturday because one piece is never enough. I always go back for a second and then there’s usually another part of the day (like right before bed) that I am ready for another slice. Dear liza! I LOVE it!
Well you know in my house we celebrate almost EVERYTHING with very few exceptions. We definitely have our favorites, but we still love any excuse to celebrate and Mardi Gras is not an exception. Since tomorrow, March 5 is Fat Tuesday, I thought it may be fun to share a cake recipe in case you would like to make it for your family tomorrow. Or, wouldn’t it be fun to make and take to your work for your co-workers to enjoy throughout the day!?
The most popular dessert for Mardi Gras is usually a king cake, but I decided to go another route. To be honest, I love a king cake because I love most all cinnamon recipes, but we’ve had a king cake twice already. I decided to make a Mardi Gras lemon pound cake and it did not disappoint. My daughter loves to help me in the kitchen and she especially loved this cake, calling it a rainbow cake. She thought all the colors and the swirling at the end was especially fun. I am adding the recipe to the bottom in a PDF file for you to print.

A coworker said she would be making this cake for a church function!!! She just loved this cake, said it was so pretty!!!
