Happy Whip It Up Wednesday! Y’all know I love a good recipe and this is definitely one that we enjoy! I figured I’ve given y’all plenty of sweet treats lately, so I wanted to throw a dinner option out there. This one is very easy and very much delicious!
I don’t know how y’all celebrate Valentine’s Day, but we celebrate it as a family and typically that is at home. We learned early on in our marriage that we just prefer to celebrate just the two of us when it’s not so crowded and busy. So, we either pick a “date night” shortly before or after Valentine’s day and just spend the actual night at home with a yummy meal and often a “romantic” movie such as Disney’s classic, Lady and the Tramp. LOL! I haven’t figured out what our movie will be this year, so if you have any suggestions, please let me know!
Since Valentine’s Day falls on a week night, I wanted to throw a quick and easy dinner option out if you want to stay home. You could serve it a few different ways. We really enjoy it with wild rice, asparagus and mushrooms. I think it would be yummy, too, over angel hair pasta with maybe some fresh shaved parmesan and fresh herbs. Of course, if your family is not asparagus fans, brussel sprouts would be a yummy option as well. This scampi would also be yummy paired with a filet or steak of your choice.
