Valentine Cake Batter Cookies

Happy Whip It Up Wednesday!  Do you love to lick the spoon when you are baking a cake?  If so, these are the cookies for you!  They taste just like cake batter and part of that is because it starts with a cake mix.  They took about 5 minutes to whip up because I always use my handy-dandy Kitchen Aid mixer.  I love that thing!  It makes baking so easy.  If you enjoy baking and don’t have one, you know Valentine’s Day is right around the corner.  (wink, wink)

The only time consuming part to this recipe is putting your batter in the fridge for 15-20 minutes before rolling them out.  This ensures that your cookies keep their form and doesn’t spread, so don’t skip this part!  You can do this two ways.  You can mix the batter and place the bowl in the fridge for 15-20 minutes OR you can roll them out and place on baking sheet with parchment paper and then place entire pan in the freezer for 10 minutes before baking.  I honestly prefer the latter because I find it harder to roll the cookies when the dough is hard.  However, if you can’t find room for a baking tray, you may need to do it that way.
