Whip It Up Wednesday: Snowball Cookies

Happy Whip It Up Wednesday!  This is my all-time FAVORITE cookie!  Some may call these sand tarts, but we only make them at Christmas time and so we have always called them Snowball Cookies.  It just seems a little more fun and festive and well, tis’ the season!  I’m not a huge sweet head, but these are hard for me to stop eating.  So, if you’re more of a ” I prefer to eat the cake and not the icing” than a “give me allll the icing and sugar” person, then these are the perfect cookie for you.  Not too sweet and honestly, that’s how I like it.  These are delicious, but honestly I’d just prefer a bag of Ruffles potato chips and some Barber’s French Onion Dip.  Bahahaha!  I will just always prefer a salty over sweet any day!

If you are any kind of a baker, you probably already have most, if not all of these ingredients on hand which is always nice.  I throw every bit of this in my Kitchen Aid mixer and make it super easy.  I love using my cookie scooper with any cookie recipe.  If you don’t have one, I would recommend getting one.  It makes it much easier.  I will add the recipe in a PDF at the bottom.

IMG_3136I boxed up these cookies and the Ritz peanut butter and chocolate delights for a small Christmas party with my old neighbors this week.  These were some of my first friends when I moved to Birmingham and they are pretty special.  I am so grateful for each of them.  It’s so awesome how the Lord knows what you need and who you need throughout your life!   Even though we aren’t neighbors anymore, we try really hard to meet for breakfast or lunch often.  I’m convinced that relationships are soooo important! It’s so easy to get busy and caught up in day-to-day activities, especially when you have kids, but life is just not near as fun without good friends!
