Whip It Up Wednesday: Chicken Casserole

We love a casserole over here and a chicken casserole is always gobbled up with no complaints at my house!  There are two different recipes that I typically go back and forth between, but I’ve had my eye on this one for a while and decided to give it a try.  I would still say the other two would be my favorites and will have to share those eventually, but this one was really good and I will definitely make it again.  I liked that a vegetable was already in the casserole, even if it was covered with goodness that maybe isn’t as good as just a simple side of steamed broccoli.  hahaha!

I did make a few adjustments to the recipe.  For one, I halved the recipe.  We usually would eat chicken casserole leftovers up, but I didn’t want to risk having a ton of leftovers if we didn’t like it.  Secondly, I did not cook my chicken per the recipe.  I always prefer putting my chicken for casseroles in the crock pot with some water, salt and pepper and cook on low for 8 hours.  I think the flavor is much better than cooking in oven or even boiling.  I hate chicken like that if I’m being honest.  It seems tougher and the flavor just isn’t as good in my opinion.  Also, I like having that broth in case I want to add to my recipe.  So I shredded my chicken with a fork after cooking and added to the bottom of my dish and then just followed the recipe from there.

 

I will say the next time I make this, instead of layering the chicken and then broccoli and pouring the mixture over the top, I plan to mix it together first before putting in the dish.  Then add my toppings of almonds, bread crumbs and french fried onions.

I always enjoy trying a new recipe and I’m glad I finally pulled the trigger here.  We will add it to our chicken casserole rotations with a few adjustments next time.  Y’all have a great day and I will see you tomorrow with an all-time favorite dessert in our family!
