Apple Spice Doughnuts

Don’t you just love a recipe that’s easy, delicious and cute as can be!?  I believe this is one of those recipes that encompasses all three of those descriptions and is PERFECT for this Fall season!  I can honestly say this is a Jennifer original.  LOL!  Can I really call it that when I start with a Betty Crocker cake mix, following her directions and only add one more ingredient!? (I need the laughing emoji here.)  Probably not!  Oh well.  But I did add icing too, so maybe there’s more than just the one ingredient.  Hmmmm…

I simply used a Betty Crocker spice cake mix and a can of apple pie filling.  I just followed the directions on the back of the cake box and then chopped the apples (see pic below) and added about 3/4 of the can to the cake batter.  I used my handy dandy Babycakes mini donut maker to cook them.  You could easily use a muffin tin, loaf pan, or a bundt cake pan.  I think any of those would look really pretty.

For the glaze, I simply took 1 cup of powdered sugar, 1/2 teaspoon of vanilla and heavy whipping cream.  I didn’t measure cream, but just enough to be able to mix and drizzle is all.  Drizzle that creamy deliciousness all over your doughnuts, muffins or cake and enjoy!!

These were disappearing before I could even add the drizzle by some little AND big hands.  haha!  They are so delicious warm!  We will be boxing some of these up and surprising someone with them tomorrow.  I’ll be sure to share a picture on Instagram of the box of goodies when we do.

Y’all know how I feel about being intentional in relationships and I LOVE to send little happies as often as possible.  I think 2 things to remember is it doesn’t have to be expensive.  How much did I really spend on this?  Maybe $5 total for a cake mix and a can of apples.  And that $5 and very little effort on my part could bring a smile to several people.  Just think about that!

Another thing I think is important is presentation.  These could be store bought doughnuts, muffins, or even a cake, but when you make the presentation a little prettier by adding a personalized note or tag and adding that pretty bow or ribbon, it takes it to a whole new level!

Think of someone this week you’d like to surprise with a “happy”, whether it be this or something as simple as their favorite drink or a box of Krispy Kreme doughnuts.  It’s the thought that will mean so much!  Have the best day, friends!
