Whip It Up Wednesday: Pumpkin Roll and Spiced Pumpkin Muffins

Happy WHIP IT UP WEDNESDAY!  Today I’m sharing our favorite October dessert and that is a pumpkin roll.  That cream cheese goodness rolled up between some pumpkin yummy and pecans makes me unbelievably happy, happy!  I think some are intimidated by it and it honestly is really simple.  I’m showing you step-by-step how I did it below.  Just DON’T do what I did or you really could have a big mess on your hands.  Fortunately, my hubby stepped in to help since I was needing extra hands and we were able to fix it super fast.  I will tell you more about that below.

The cake recipe is so easy and takes hardly any time to bake because it’s so thin.  I think the dumping and rolling part of this recipe is the intimidating part, but as long as you don’t do what I did, you’ll be fine and that is MAKE SURE YOU COVER YOUR TOWEL WITH POWDERED SUGAR BEFORE DUMPING. Lol!  Can you tell I have two different towels in some of the pics?  That’s because the first one didn’t have the powdered sugar and I had to transfer.  If you roll the cake up without the powdered sugar on the towel, when you try to unroll it, the cake with just stick to your towel.  I just sprinkle a good bit on the towel and just kind of rub it in with my hands to make sure every inch is covered.  Then when you go to unroll, very little cake should stick to the towel.

Then just spread your icing out really well and roll back up as tightly as you can get it. Wrap in cling wrap and refrigerate for an hour or so.  When you pull out and trasfer to your dish, sprinkle a bit more powdered sugar on it just to be pretty. Wouldn’t this be so good and pretty for Thanksgiving Day!?

Now, I HATE throwing food away.  That is such a pet-peeve of mine, so I could not throw all this good canned pumpkin away.  I mixed the remaining can I had leftover from the pumpkin roll recipe with this spice cake box and 1/3c of water and made muffins.  I thought they were the perfect little dessert or for breakfast the next morning.  I sprinkled pecans on one pan and left the other pan without.  It’s as easy as that!  Don’t forget to spray your muffin pans with non-stick spray though! You can also freeze these muffins if you don’t need them at the time and pull out a few as needed and de-thaw in microwave.  I’ve done that before and it works perfectly!
